Loaded Baked Potato Soup

WARNING: this is terribly unhealthy & terribly addicting!

Loaded Baked Potato Soup

apx. 6 Potatoes (I am using red potatoes so I used about a dozen little ones)
1 Onion, chopped
2 Tbsp. Garlic, minced
1 pkg. Bacon
1/2 C Flour
1/2 C Butter
6 C Milk (doing half milk and half heavy cream is amazing too!)
1/2 C Sour cream
4 oz. Shredded cheddar cheese
Garlic salt, onion powder, parsley, salt & pepper to taste

Directions
    1) In one large pot, boil diced potatos.
    2) In large pan, fry bacon until crispy. Remove bacon and save the bacon oil in a small bowl.
    3) Dice onion and garlic. Saute' ingredients in the same bacon pan that still holding the drippings and small amounts of bacon fat/oil.
    4) Remove tender potatoes, drain and put to side.
In the large pot, put transfer the onions and garlic. Add butter and flour. Still until combined.
    5) Add milk and bring to a boil. Then add potatoes, sour cream and cheese. Stir well, making sure that the soup does not stick to the bottom of the pan.
    6) Add any spices you may desire: garlic salt, onion powder, parsley, salt and pepper.

**If soup is too thick, add milk, just be aware that you then need to re-spice your food.
**If soup is too thin, add more flour, again, checking the spices. Sometimes the reserved bacon fat can add great flavor to the soup, adding just a tablespoon or so.
