White Chocolate Chunk Cookies

These cookies are divine! Seriously. You've gotta try them... They won the Pillsbury Bake-Off in 1988

Ingredients:

3/4 C firmly packed brown sugar
3/4 C white sugar
1 C shortening
3 eggs
1 tsp vanilla (I used almond extract and wow, were they yummy!)
2 1/2 C all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup coconut
1/2 cup rolled oats
1/2 cup walnuts (I substituted almonds when making this once and that was great too)
12 oz. white chocolate chips or chunks

Directions:
  1. Heat oven to 350 degrees.
  2. In large bowl combine sugar, brown sugar and shortening; beat until light and fluffy.
  3. Add eggs 1 at a time, beating well after each addition.
  4. Add vanilla (or almond extract); blend well.
  5. Add flour, baking powder, baking soda and salt. Mix well.
  6. Stir in remaining ingredients.
  7. Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cooking sheets.
  8. Bake at 350 for 10-15 minutes (my oven is HOT and baked them to perfection in 8, so keep an eye on them so they don't over cook and get hard).
  9. Cool for one minute before removing from the cookie sheets.
  10. ENJOY!
