Elianna LOVES waffles.
Two weeks ago this conversation happened during dinner.
(Elianna is in the mids of eating a large plate of dinner, she approaches me)
E: Mommy, Eli wants affles.
K: You want what?
E: Affles.
K: You want Waffles?
E: Yeah! Affles Eli's favorite!
K: Okay, you may have waffles if you finish your dinner on your plate.
E (finishing her dinner): Mommy Eli wants affles now.
K: Okay baby, I'll make you a waffle. Are you sure you are still hungry?
E: Yes mommy, affles Eli's favorite!
K: Okay Eli.
So my skinny-minny two year old proceeded to eat her entire plate of dinner PLUS 1 1/2 whole waffles.
As a result of this being a common request in our home, I have come up with a super sneaky way of making waffles "healthy" for my baby girl. Hope you find it yummy too:
Ingredients:
Pam cooking spray
3/4 C Quaker oatmeal pancake mix
3/4 C Bisquick mix
1/3 C apple sauce
1 egg
1/4 C ground flax seed
1 banana, well mashed
Milk (as needed to thin the mixture into the semi-runny consistency needed for waffles)
Syrup, as needed
Directions:
- Preheat waffle iron & spray with Pam.
- In bowl, combine both mixes, apple sauce, egg, flax seed, mashed banana and milk.
- Combine until smooth and fairly runny.
- Once waffle iron in hot, pour onto the iron and wait for the little green light : )
- Serve with hot (low sugar) syrup.
- Enjoy a healthy alternative to "Eli's favorite!"
