All props go to Ina Garten on Food Networks, Barefoot Contessa for this recipe. It is divine!
I made in a few nights ago for a meeting at my house and got great reviews.
It's super easy to make and super yummy.
Enjoy peach season with a warm baked crisp. Your family will thank you!
Peaches, peeled and sliced
Peaches, raspberries & sugars mixed and ready for the baking dish
The crisp all assembled and ready for the oven!
Ingredients:
10-12 peaches
1 lemon, zested
1 1/4 C granulated sugar
1 C light brown sugar, packed
1 1/2 C plus 2-3 Tbsp. all-purpose flour
1/2 pint raspberries
1/4 tsp salt
1 C oatmeal
1 stick unsalted butter, cold & diced
1/2 C nuts (pecans or walnuts work great)
Directions:
- Preheat oven to 375 degrees.
- Butter a large, glass baking dish. An oval or rectangle are fine. (an 8x8 is too small)
- Immerse peaches into boiling water for about 30 seconds, then place them in cold water. After doing so, you should be able to peel the thick peach skin off fairly easily.
- Slice the peaches into thick wedges and place them in a large mixing bowl.
- Zest the orange onto the peaches, as well as adding 1/4 C granulated sugar, 1/2 C brown sugar & 2 Tbsp. of flour.
- Toss well.
- Gently mix raspberries into the peach mixture and let it set for 5 minutes.
- If a lot of liquid accumulates at the bottom of the bowl, add another Tbsp. or two of flour. (I added some cornstarch mixed with water as well to thinking the sauce of the crisp)
- Once mixed, pour the peach/raspberry mixture into your baking dish and spread evenly.
- In another large bowl, mix 1 1/2 C flour, 1 C granulated sugar, 1/2 C brown sugar, oatmeal, salt, and diced butter.
- Blend on a low speed until the butter is well Incorporated and forms pea size balls of dough.
- Gently stir in nuts, and then spread on to of the peaches in the baking dish.
- Bake for one hour, until the crisp is lightly browned on top and bubbling.
- Remove from oven and serve immediately.
- It's great paired with vanilla ice cream and home made whipped cream (whipping cream, 1 tsp vanilla, 2 Tbsp powder sugar on high speed mixer for 4 minutes).
- Enjoy!
